π Ingredients
2 cups Brussels sprouts, halved
2 cups sweet potatoes, peeled and cubed
1 red bell pepper, chopped
1 red onion, sliced
2 carrots, thick-sliced
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp honey or maple syrup
1 tsp garlic powder (unsalted)
1 tsp onion powder
Β½ tsp black pepper
Zest and juice of 1 orange
1 tbsp fresh thyme (or 1 tsp dried)
1 tbsp fresh rosemary (or 1 tsp dried)
(Optional) 2 tbsp toasted pecans or pumpkin seeds for garnish
πͺ Instructions
Preheat oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.
In a large bowl, combine vegetables.
Whisk together olive oil, vinegar, honey, orange juice and zest, garlic powder, onion powder, and pepper.
Toss vegetables in the dressing until evenly coated.
Spread in a single layer and roast 30β35 minutes, stirring halfway, until golden and tender.
Sprinkle with herbs before serving.
(Optional) Garnish with toasted nuts or seeds for crunch and extra nutrients.
